Rava Laddu Sooji Ladoo – Indian Sweet

when my father come to visit us, My mother used to make tasty laddoos on a very first day. Still I remember my father never said “enough” to rava laddoos. He can finish 6 -7 laddus at a stretch. Whenever my mom prepares laddos, she prepares 100’s of laddoos. 🙂 This laddoo is not only my fathers favorite but also my favorite sweet recipe. This is the first sweet reicpe, which I learnt from my mom. I served rava laddoos to few of my german class mates, they liked it so much. So I thought why not to share with others. In this recipe I have used sugar sprinkles (German name: Zukhersteusel) to make colourful laddoos. Usually, Germans use these sugar sprikles for preparing cakes. Some people add safron to get a nice aroma. But I like the aroma of cardomom, I used just cardomoms. Here is the recipe for making Rava Laddu Sooji Ladoo – Indian Sweet with step by step photographs. Ingredients
- Rava / Semolina / Suji– 1 cup
- Sugar – 1 cup
- Ghee/Butter – 25 gms
- Milk –500ml
- Cardamom-10
- Cashew nuts – 10 whole nuts
- Raisins – 10 nos
- Grated fresh coconut – 25 gms
- Sugar sprinkles / Chocolate sprinkles - 50gm
- Sugar - 5tbsp.
Method
Step 1
Rava / Semolina / Suji Preparation: Heat 3 tbsp Ghee or Butter in a steel pan. (Do not use nonstick pan, because roasting rava peels the enamel coated in the pan.) Add a cup of suji/Rava/ semolina roast it until nice aroma comes out and it turns to brown colour. While roasting the Rava, make sure that the burner is in sim, otherwise there is a chance of the rava getting over roasted and it turns black.
Step 2
Sugar Preparation: Dry grind a cup of sugar finely. Take out the sugar powder in a bowl.
Step 3
Sugar Powder: Sugar powder is ready to make laddoos.
Step 4
Preparation of milk for making laddoos Boil the milk on another burner parallely, So that the milk thickens to 200ml.
Step 5
Semolina and sugar trasferred to a bowl Transfer the roasted rava and sugar powder to a bowl.
Step 6
Roasting Cashews, kismis and elaichi: Heat 3 tsp of ghee on a nonstick pan, Once the ghee is hot enough, roast cashew nuts, raisins and splitted cardomoms.
Step 7
Seasoning: Once the raisins ballons up trasfer it to the above bowl.
Step 8
Mixing hot milk with laddoo mixture Mix all the ingredients and take a small portion of the laddoo mixture in a bowl, add little warm milk and mix well. Make sure if you are able to gather it as balls. (If the milk is too hot, you got to burn your fingers. So use warm milk for making any laddoo). Make it as medium size balls. (If you find this step is difficult, add warm milk to all the ingredients. When the milk added is enough to make laddoos, transfer it back to the pan and cook in sim for 2 mins. Then turn off the burner. When the mixture is warm, make it as balls)
Step 9
Semisolid laddoo mixture: Semisolid state laddoo mixture is ready to make laddoos.
Step 10
Coating laddus with coarse sugar: Take coarse sugar and sugar sprinkles in two different plates. Now coat the laddoos with coarse sugar and sugar sprinkles.
Step 11
Coating laddus with sugar sprinkles: Apply sugar sprinkles over the laddu.
Step 12
Now your yummy tasty colourful is ready to serve!
Tips:
1. If you like chocolate flavor, You can use chocolatesprinkles in Step 9. Safron gives nice aroma to the laddus.2. Some people use grated coconut. If you use grated coconut, laddoos should be finished in a week.
